This is really tasty and is great for a crowd. My family and friends loved it. It has bourbon how could they not.

Bourbon Chicken and Rice

I started by putting 3 pounds of boneless, skinless chicken thighs in a oven safe dish. I started by mixing 1 Cup bourbon, 1/2 cup soy sauce, 1/2 cup brown sugar, 1/2 cup water, 2 tsp. salt, 3 tsp. pepper and 3 TBS ketchup together. Pour that over the chicken add 1/2 diced onion and 1 diced red or orange pepper and cover with tin foil and refrigerate for at least 2 hours or up to overnight. The longer you marinate it the tastier the chicken will be.

When you are ready to cook pre heat oven at 380 degrees and let bake for 40 minutes. It should render down and the sauce with be very rich. Take chicken out and cut up when it is cool. Put back in pan and top with 1 Cup green onions and sprinkle with 1/4 cup brown sugar. Turn on the broiler to caramelize the chicken but watch it carefully because it will burn if left too long. Will not take long to crisp the edges.

Stir and serve with rice.
